The beefburger desperately needs a lift. While floury bread buns and obese children too readily spring to mind, the most prepossessing couple behind Muddy Boots Foods – which make burgers on the Ragley Hall Estate, Warwickshire – would urge us to think again.

“We say — free the burger,” exclaims Miranda Ballard, 28, who, with her husband, Roland, 30, will be presenting their dribble- inducing delights in the Food Village at The CLA Game Fair for the first time, where a record number of 80 food and drink producers will urge you to sample their fare.

Rehabilitating ubiquitous lumps of minced beef must have looked an unedifying task. But with fiendish-sounding combinations like goat’s cheese and sun-dried tomato, Stilton and cider, leek and mushroom, and caramelised onion and mozzarella — all recipes created by Miranda – you hope her creations taste as ravishing as they sound.

The cattle are from the family’s Aberdeen Angus herd at Church Farm, Shrawley, where Roland’s father, John, has farmed for 40 years. Using prime beef, hung on the bone for 21 days, the burgers are sold online, at farmers’ markets and delicatessens, and in Waitrose stores in Malvern and Droitwich from November.

Grass-fed and naturally reared – which means calves single- suckle their mothers for the first seven months — the animals are raised to the highest standards.

“It’s a slow farming method but it makes for happier cattle,” Miranda says.

Two more lively producers joining forces at Ragley will be Adam Henson, the BBC’s Countryfile presenter who farms in the Cotswolds, and his friend and neighbour, Jeremy Benson, the founder of Benson’s Apple Juice.

Henson’s family farms 1,600 acres near Stow-onthe-Wold, which is where his father, Joe, began conserving rare breed pigs such as Tamworths and Gloucester Old Spots, and went on to open the Cotswold Farm Park. Today the farm collects waste apple peels from Bensons, which are fed to his pigs. The results of this collaboration will be there for the tasting when sausages made from these fruit-feeding pigs are sure to satisfy a snack-attack, washed down, of course, with some apple juice.

Others will also have grills at the ready. Ben Smith, who with his father, Andrew, runs The Barn Bacon Company from their farm and shop near Newark, Nottinghamshire, will be eager to seduce fair- goers with “dry-cured” bacon rolls.

“Dry curing is old-fashioned and a much slower process,” says the farmer, who rears 300-400 pigs outdoors. “Dad rediscovered dry curing a decade ago. You just have to taste our bacon to appreciate the difference between it and the watery stuff most people are used to.”

If you want an equally healthy-sounding treat, you might venture to a bison burger. “Bison is high in protein yet low in fat and cholesterol,” says Ruth Wakeling, who farms 100 head of bison with her husband, George, at Bouverie Lodge Farm, near Melton Mowbray, Leicestershire. “For 11 years we’ve been selling from the farm gate and from the farmers’ market in West Bridgeford, on the edge of Nottingham, which is one of the most successful in the country.”

These producers accept that buttering up the public with a few tasty samples is part of the selling process and that it does work. While a percentage of those who try the cheese, smoked meats, pate, bread, juices, wines and beers have little intention of spending, more than a few become diehard fans.

I know I have

I know I have a new reality; the things I once took for granted have now become a challenge. I can’t turn my head suddenly or lay flat on my back, but I can breath, I can laugh and I can rejoice and thank God for His New Year gift to me- my blessing. I had a biopsy on my left breast and on January 5th, 2005 after a second breast cancer scare, I was told that my biopsy came back negative. Yes folks, I am cancer free…isn’t God great?.

DAVID Gillick, European champion. It’s a title that he once ran a mile from but now embraces as he prepares for his Olympic Games debut in Beijing.

For such a long time, that gold medal he won indoors in Madrid – announcing himself on the international scene in such dramatic circumstances three years ago – hung heavily around his neck.

Everywhere he went in Dublin, Gillick felt he was being looked at. Judged. He had to get away, and Loughborough University has been the setting for the maturing of this 25-year-old Dubliner.

“I didn’t know how to handle it,” he now recalls. “I was like ‘wow, what just happened?’.

“I wanted to go back to normal and I felt like I couldn’t. Maybe that should have been the time I moved, but how are you meant to know? It’s just one of those things.

I still had a lot going on in Ireland. “I had a girlfriend of three years, I still had my degree to finish and I was thinking everything was rosy. I just wanted to go back to normal, like the week prior to winning the medal and just do my normal stuff.”

Gillick came from nowhere – as far as the general public were concerned – to European champion. He recalls going to the Luas stop on the Monday after his success – the first gold medal for Ireland in a sprinting event in 75 years – and being petrified that he would be noticed.

“I literally came back on Monday from winning the Europeans and I was all over the papers and then I went back to college,” he said.

“I would walk down to the Luas and you would get the odd person saying ‘well done’ which was really weird. I don’t think people really expected it because that was my first year of doing indoors.

I probably didn’t even expect it either which was the harder thing to take.

Going out for a meal used to be something which happened only on special occasions but these days it’s often a several-times-a week occurrence simply because we are too tired to cook.

If eating out is a regular event for you, avoid the temptation to treat it like an invitation to over-indulge. This is part of your regular eating pattern so you need to treat it as such. Eat only as much as you need and no more.

Occasional overeating does no harm but any level of regular overeating is bound to result in you piling on the pounds.

Having said that, you CAN eat healthily in restaurants, so if you eat out a lot, don’t despair. Just plan your trip with care and set a firm intention to eat healthily before you go.

Bear in mind that the cheapest restaurant options are normally the most unhealthy. Fast food and lower end restaurants are not noted for their use of low-fat or low-calorie cooking methods or foods.
